I have to say, I am a tad proud of myself with these. Perfect for our bird/nest baby shower this weekend and actually not too complicated! For future reference, the perfect toasted coconut seemed to be 4 minutes at 325', stir, and 2 more minutes. Be sure to remove it from the cookie sheet asap though, because it will keep cooking.
